How many scrolls can I append at once?

There be no fixed limit on scroll count, but each voyage must stay within th' per-scroll upload limit (5 MB without an account, 10 MB when signed in), including total combined size.

Can I control which sheet be used from each workbook?

Th' tool appends all source sheets. Use th' merge tool first if ye need t' pick specific sheets.
